Looks and sounds delicious!
1 cup quinoa
I beetroot finely diced
Handful of finely diced pumpkin
Bunch of mint leaves finely diced
1/2 sweet potato finely diced
I onion finely diced
2 garlic cloves finely diced
1 can black beans (I use organic but any should be fine) rinsed and drained
1 can diced tomatoes
1/2 cup Nutritional yeast
Flour as needed (I used lentil flour to make them GF)
Salt & Pepper to taste
Method:
Cook quinoa according to instructions on package.
Fry onion and garlic in a little oil over medium low heat.
Add beetroot, pumpkin, sweet potato, black beans, tomatoes and mint and fry until soft.
Place in a large bowl with the quinoa and mix. Allow to cool.
